Chenin Blanc's versatility is perhaps why the variety appeals to so many. From dry to semi-sweet, still wines to sparkling wines as can be enjoyed on their own, especially the younger un wooded style, but many examples having extra lees contact and/ or fermented and matured in wood adds an interesting dimension for food pairing. varieties role with oak. Using 2nd or 3rd fill oak barrels has helped ease the previous heavy oak domination from the wine, but where the winemakers have used 1st fill barrels their selection of the wood and type of toasting has allowed for better balance in the final result.
