In a large bowl, combine all the ingredients.
Stir thoroughly to combine. You can store this
rub in an airtight container for up to 1 year.
What does a rub do? Its job is to
season the meat, help seal in moisture,
and ensure you get great flavor on
your smoked and grilled meats. Do
you have to use it? No, of course
not. You're the cook, and sometimes a
steak is great with just salt and pepper,
but it's a really easy thing to make
ahead of time and keep around, and
it makes your food taste exponentially
better-so a rub is worth making and
having in your bag of tricks. That said,
if you're lazy, buy my own brand from

money!) Or you could try this recipe,
which approximates (but never equals,
mind you) my own secret formula.
1 cup packed light brown sugar
2 tablespoons chili powder
2 tablespoons mustard powder
2 tablespoons onion powder
2 tablespoons garlic powder
2 teaspoons cayenne pepper
2 tablespoons kosher salt
2 tablespoons freshly ground black pepper
