lum pudding has been served on Christmas
Day for centuries. The traditional plum
pudding is served in a blaze, with a sprig of
holly stuck on top. For the plum pudding sauce,
a little brandy is poured over the pudding and lighted
at the last moment to produce the desired effect.
Many a favourite plum pudding recipe has been
handed down from generation to generation, which
adds to the festivity of the day. Plum pudding is best
when cooked four or five weeks prior to Christmas
and can be stored for months. During the Victorian
era, silver coins were baked in the pudding, with

C.ex Head Chef Greg Watkins has welcomed a new
addition to his team in apprentice chef, Kayliegh Ray.

Greg Watkins
After completing work experience in the club's kitchen
at C.ex Coffs earlier this year, the Bellingen High
School student soon realised a career in the culinary/
hospitality industry was what she desired most. Since
coming on board, Kayliegh has grasped her opportunity
with both hands, displaying great enthusiasm in her
daily duties and also attending TAFE classes. Due to
her creative flair with desserts she has commenced
extra tuition by way of Pastry Chef classes, which will
enhance her kitchen skills for the future.
Kayliegh spends her leisure time playing hockey
for Urunga and has impending plans to travel and
experience culinary echnics of the globe.
