Local Food continued from page 11 Spring Frittata Serves 4 As a member of an egg CSA, each week I pick up a dozen of the freshest eggs from friends down the road. One of my favorite recipes to make with those eggs is a quick and easy frittata—it’s simple to throw together eggs and milk with whatever vegetables you have in the fridge. All of these ingredients can be found through your local farmers. 8 free-range local eggs ½ cup local whole milk 2 Tbsp butter 2 medium potatoes, diced into ¼ inch cubes ½ cup sliced shiitake mushrooms 2 green onions, sliced 2 cups leafy greens (spinach, kale, swiss chard), coarsely chopped 3 ounces local cheese (goat chevre, grated cheddar) Preheat oven to 400. 1. Whisk together eggs and milk. Season with salt and pepper. 2. Melt butter in 10-inch skillet over medium heat. Add potatoes and mushrooms and cook for 10-15 minutes until browned. Be careful not to let them burn! Reduce the heat if needed. 3. Sprinkle green onion and leafy greens over potato mixture, cover with lid to wilt the greens. 4. Pour egg mixture evenly over vegetables, top with cheese, and place skillet in oven for 15 minutes. Serves 4 Skillet Pork Chops Pork has never been a favorite meat of mine…until I had pulled pork at a farm lunch. I bought a pack of pork chops from the farm, cooked them up on a skillet and served with oven-roasted root vegetables (carrot, onion, beet, potato, sweet potato). Delicious. Again, most of these ingredients can be found through local sources. 4 pork chops 1 Tbsp butter 1 sliced large onion 1 cup sliced mushrooms 2 Tbsp dijon mustard ½ white wine 1. Heat skillet on medium heat and melt butter, being careful not to let it burn. 2. Sautee onion and mushrooms until soft (about 10 minutes). 3. Remove onion mixture and place pork chops in pan. Cook for 5 minutes then flip and cook for another 3-4 minutes. 4. Remove chops and let rest while preparing sauce. 5. Add mustard and white wine to skillet, stir to incorporate and add the onion mixture. Cook for 1 minute. (You could add some cream at this point if you like a thicker sauce) before visiting.
